12 ounces cavatappi pasta (short tubed corkscrew pasta)
1 cup chopped onion
2 garlic cloves minced
1/2 tsp. red pepper flakes
1/4 cup olive oil
3/4 cup dry white wine
2 14-ounce cans peeled petite diced tomatoes
Salt and pepper to taste
1 1/2 cups grated Romano cheese

Directions:
Directions:
Cook cavatappi according to package directions, drain, and set aside.
Saute onions, garlic, and red pepper in olive oil over medium heat until onions are translucent. Add white wine and cook until nearly evaporated. Stir in tomatoes with their juice and cook until slightly thickened (3-5 minutes). Add salt and pepper to taste. Mix into cooked pasta. Cover and keep warm for 15-20 minutes to let flavors blend. Top with Romano cheese.
