olive oil 2 tbsp
carrots, peeled and chopped 3
onions, chopped 1 med
Celery,chopped 2 stalks
Parsnip, peeled and chopped 1
Fresh Parsley,chopped 2 tbsp
adobo seasoning(optional) 1packet
Garlic,chopped 1 clove
Bay Leaf 1
Chicken broth or water 4 c
Chicken Breasts or leg quarters or rotisserie chicken

Directions:
Directions:
1. Heat the olive oil in a large soup pot over medium high heat.
Add the carrots,onion,celery,parsnip,parsley, and adobo seasoning. Add salt and pepper to taste. Cook until the onions are translucent. About 5 minutes.
2. Add the garlic and bay leaf and cook 1 minute more,until garlic is fragrant.
3. Add the chicken broth or water to the pot. If using fresh chicken parts,add them to the pot now.Bring the soup to a boil,then reduce the heat to a simmer and cook until the vegetables are tender and the chicken is fully cooked.
4.Remove the chicken pieces,pull the meat from the bones,and use a fork to shred it into bite-size pieces. If using rotisserie chicken,shred the meat with a fork,add to the soup,and simmerover low heat until the chicken is heated through.
