10 to 15 Pound Beef Brisket, butcher trimmed
3/4 Cup F & Z Barbecue sauce

Take 2 large sheets of heavy-duty foil...approximately 30" each...and lay one on top of the other. Fold one side together according-style to make one large piece of foil. Place this in a large (about 20" X 12") pan with sides of at least 3 inches.

Remove brisket from package & rinse. Place meat, fat side on the top, in the foil lined pan. Pour barbecue sauce over top of meat. Roll up the sides of foil making a seal. Roll ends of foil up, again making a seal. Make sure the ends are rolled up so any grease stays in the pan.

Cook 7 hours at 300º. When complete, discard juice. The fat on top of the meat should come off like meringue on a pie; and if it doesn't it's not done. Clean the fat off & discard. Slice the meat against the grain on a 45º angle.
