1 1/2 c. sugar
6 tbsp. corn starch
1/2 tsp. salt
1 c. water
1 egg
12 oz. cream cheese, softened
2 tbsp. butter
2 tsp. grated lemon peel
1/2 c. lemon juice

Directions:
Directions:
in a large saucepan add sugar, corn starch and salt. Mix well and stir in the water. Cook over medium heat, stirring, until mixture comes to a boil. Boil 1 to 2 minutes or until mixture becomes slightly thickened.
Beat egg and slowly whisk hot pudding into beaten egg. Return to saucepan and boil for 30 to 60 seconds, stirring slowly.
Remove from heat and add cream cheese and butter. Stir until melted and add lemon peel and lemon juice.
