6-8 small plum tomatoes
3-4 Tbsp. olive oil
3-5 cloves of garlic, minced
2 med. jalapeņos, seeded and finely chopped
3-4 Tbsp. fresh chopped cilantro
2 Tbsp. lime juice
1 tsp. chili powder
1/4 tsp. salt
1/4 tsp. ground white or black pepper
8 oz. crumbled feta cheese
4-6 Tbsp. pine nuts, toasted
4 servings of cooked angel hair pasta

Directions:
Cut tomatoes into small bite size pieces, reserving juice. Combine tomatoes, reserved juice, olive oil and next 7 ingredients; stir, cover and let stand at room temperature for at least an hour. Cook pasta according to package directions; drain, don't rinse pasta. Serve tomato mixture over pasta top with feta cheese and pine nuts.
