4 slices of bacon
8 ounces small red potatoes, cut into 1/2" pieces
1 cup frozen pepper stir-fry, thawed and drained
1 can (12 ounce) evaporated milk
1 package (9 ounce) frozen cheese tortellini
1 scallion, sliced
1 1/2 cups water
1/2 teaspoon salt
1/8 teaspoon pepper

Directions:
Directions:
In pot over medium heat, cook bacon until crisp, 6-8
minutes. Drain on paper towels. To drippings in pan,
add potatoes and pepper stir-fry; cook, stirring
occasionally, until potatoes start to soften, 5 minutes.
Stir in water, evaporated milk, salt and pepper; bring
to a boil. Add tortellini; cook until tender, 8-10 minutes.
Remove from heat; stir in scallion. Serve sprinkled with
crumbled bacon.
