1 pkg sour cream and chive instant mashed potatoes
2 tbsp butter
1 lb lean ground beef
1 large onion chopped
1 can mushrooms
1 tsp salt
1 can cream of mushroom soup
2/3 plus 3 tbsp baking mix
1 bag frozen broccoli
1/4 cup ketchup
1/2 cup milk
1 egg

Directions:
Directions:
Preheat oven to 400ºF. Cook beef, onion, mushrooms and salt in skillet over medium heat, stirring occasionally until beef is brown. While beef is cooking heat water and butter to boiling; remove from heat and add potatoes. Let stand for 1 minute, then stir until smooth. Stir in 2/3 cup biscuit and egg. Drain beef. Combine milk with mushroom soup. Stir in 3 tbsp of biscuit mix into soup. Stir soup mixture, ketchup and broccoli into beef mixture. Heat to boiling. Boil uncovered for 1 minute. Pour into greased 3 qt. casserole. Scoop potato mixture around edge. Bake uncovered 25-30 minutes or until potatoes are light golden brown.
