1 16 oz. package of cream cheese
2 eggs
1/2 cup sugar
2 tsp. vanilla extract
1 tsp. lemon zest
12 vanilla wafers
Fruit pie filling

Directions:
Directions:
Preheat oven to 375º. Beat first four ingredients for 5 minutes. Line cupcake pan with papers. Place a vanilla wafer in the bottom of each. Fill with the cheese filling. Bake 12 to 15 minutes at 375º. Cool and top with fruit filling.

These tarts freeze well in large freezer zip lock bags. Place fruit filling on after they have been thawed.
