3 eggs
1 13 oz. can evaporated milk
2 cups whole milk
1 tbsp. vanilla extract
3/4 cup sugar
2 1/4 cups cooked white rice

Directions:
Directions:
Preheat oven to 350º. In a large bowl, beat until well mixed the first 5 ingredients. Place the cooked white rice into a 2 qt. rectangular glass pan. Add milk mixture stirring with a fork. Bake at 350º for 40 minutes. Stir with a fork 3 times during baking. Sprinkle with nutmeg on top when finished baking, cover and cool in refrigerator.

I like to sometimes add a cup of raisins stirred in after baking before the nutmeg goes on top. Also sometimes I use 1 can of light coconut milk instead of the evaporated milk. Please note that these variations are considered blasphemies to many Holly family members!
