1/3 cup bottled creamy Italian salad dressing, or your own dressing
1/2 teaspoon fennel seeds, lightly crushed
2 cups fresh cut coleslaw mix
1 cup shredded red cabbage
1/2 cup roasted red peppers drained, patted dry, coarsely chopped
1/4 cup drained pimiento-stuffed green olives, sliced

Directions:

In small bowl combine salad dressing and fennel.

In large bowl combine coleslaw mix, cabbage, peppers and olives. Add salad dressing mixture; toss to combine.

Cover and refrigerate at least 1 hour or up to 4 hours. Toss before serving.

To crush fennel seeds and release their flavor, place the seeds in a plastic food storage bag and pound with a rolling pin or heavy can.
