1 1/2 cup All Purpose Flour
1 teaspoon Cinnamon
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 teaspoon Baking Powder
1/4 teaspoon Nutmeg
1 cup Sugar
1/4 cup Olive Oil (or your favorite)
1 cup Fine Shredded Zucchini (unpeeled)
1 Large Egg

Directions:

Preheat oven to 350º
Using a grader, finely shred 2 small washed zucchini
Mix all dry ingredients in one bowl
In second bowl, Mix all wet ingredients
Fold the wet ingredients into the dry ingredients- Mix thoroughly
Grease loaf pan on the bottom and half way up the sides

Bake @ 350º for 50-55 minutes on middle rack
Allow to cool on a wire rack for at least 30 minutes before cutting
