2 lbs. lean ground beef
1 medium onion, diced
1-2 cloves garlic, minced
3 T. margarine
3 T. all purpose flour
3 T. ketchup
2 cans beef consommé
2-3 T. Kitchen Bouquet
1-2 c. frozen mixed vegetables
prepared mashed potatoes, kept warm (do not add extra butter or milk)
1-2 c. shredded cheddar cheese

Brown the ground beef in a large oven-safe skillet (I use a large iron skillet) with onions and garlic; drain, pour into a bowl and set aside. In same skillet, melt margarine. Stir in flour to make a roux. Cook while stirring constantly with a wooden spoon over medium heat until dark brown (about 10 minutes). Using a whisk, gradually add in consommé, ketchup, and Kitchen Bouquet; combine well until gravy comes together and begins to thicken slightly. Add the frozen mixed vegetables, reducing heat to a simmer until vegetables are tender. Return cooked beef to gravy mixture, stirring to blend all. Let heat through. Remove from heat, and level out surface of meat mixture. Top with prepared mashed potatoes, being careful to spread completely to edges of skillet, sealing meat mixture underneath (this will help prevent bubbling out and over the potatoes). Sprinkle with cheese. Bake at 350º for 20-25 minutes or until cheese is melted. Let set for approximately 15 minutes to make serving easier.
