2 jars spaghetti sauce (26 to 28 oz)
1- 8 oz. can tomato sauce
seasonings of choice
1- 16 oz. box lasagna noodles, uncooked
1- 15 oz. container Ricotta cheese
16 oz. Mozzarella cheese, shredded
1/2 c. Parmesan cheese

Spray 11 x 5 pan with cooking spray. Count noodles and divide by 4 for an even amount in each layer. Combine water, sauces and seasonings in a large bowl. Cover bottom of pan with 2 to 2 1/2 cups of sauce. Arrange layer of uncooked noodles slightly overlapping on top of sauce. Spread 1/3 of Ricotta, 1/3 of Mozzarella and 1/3 of Parmesan over noodles. Add another layer of sauce. Repeat layers twice more (alternating noodles so there are no holes) and top with last layer of noodles. Pour remaining sauce over top, being sure to cover edges. Sprinkle with Parmesan (optional). Total of layers of noodles, 3 layers of cheese, 5 layers of sauce. Cover tightly with heavy-duty foil or 2 layers of regular foil (shiny side down). Set on jelly roll pan or cookie sheet. Make at least 2 hours early (or refrigerate overnight) and let set before baking. Bake 1 1/2 to 2 hours at 400º F, then for 2 1/2-3 hours at 350º F. Insert fork in center to test. Let set at least 30 minutes before eating.
