1 stick butter, room temp.
1/2 c. plus 2 TB. sugar
1 t. vanilla
1 t. gound fennel seed
1/4 t. salt
1 lge. egg
1 1/4 c. flour
1/4 c. pine nuts

Directions:
Directions:
Beat with elec. mixer butter, sugar, vanella,salt, and fennel seed until light and fluffy; beat in egg. Add flour and mix until just blended. Transfer dough to a sheet of plastic wrap and shape into an 8 inch long log. Refrig. for 2 hours.

Preheat oven to 350 degrees.. Line heavy lge. baking sheets with parchment paper. Cut into 1/8-1/4 inch thick slices, spacing evenly apart. Press the pine nuts decoratively atop cookies and bake until cookies are golden around edges, about 15 min.
