1 T Dijon mustard
1 tsp salt
Juice of 1/2 to 1 lemon, depending on size
5 T extra virgin olive oil
4 T light vegetable oil (safflower, vegetable, canola)
black pepper to taste
splash of Balsamic vinegar

Directions:
Directions:
Mix mustard, salt, lemon juice, pepper (and vinegar IF used) in a bowl. Once blended, slowly add the oil while whisking.
Any wine vinegar (red wine, balsamic, etc.) can be substituted for lemon. You can also add a splash of vinegar as noted above.
You will need to adjust the quantity of oil to your taste. You may need to add more oil in equal amounts depending on how much lemon juice you have in the dressing or how sour you like it.
