Ingredients: Crust: 3 c. flour 1/4 tsp. salt 1 c. shortening (cut into small pieces) ~ 6 Tbsp. ice water (place ice in water to chill, then remove ice) 1 large egg 1 1/2 tsp. white vinegar
Pie Filling 2 large baking apples (Braeburn, Rome Beauty, Jonagold) peeled, cored and chopped 1 c. rhubarb (optional) 1 c. frozen raspberries, thawed and drained 1 c. frozen strawberries, thawed and drained 1 c. frozen blueberries, thawed and drained ~ 1 c. sugar 1/3 c. flour 1 Tbsp. fresh lemon juice

Directions:Crust: Combine flour and salt in a food processor. Add shortening and process until it turns into coarse meal. Whisk water, egg and vinegar in small bowl. Gradually add to flour mixture using on and off measures with processor. If dough is dry, add water by the teaspoonful. Gather dough into 2 equal balls and flatten into discs. Wrap each in plastic wrap and refrigerate for one hour (can be made 1 day ahead). Let soften to room temperature before filling with fruit. Preheat oven to 400º. Roll-out disk on floured surface to 11-inch diameter. Transfer to a 9-inch glass pie dish. Trim crust evenly to edge of dish.
Pie Filling: Combine all ingredients and stir. Load into the crust. Roll out remaining dough to same diameter. Place over filling. Trim crust but leave one half inch overhang. Fold top crust under bottom crust and seal. Slit top to vent.
Bake 25 minutes on baking sheet. Reduce to 350º and bake until golden and juices bubble, about 30 minutes more. Cool. Garnish with fresh blueberries, blackberries, strawberries and raspberries. Add vanilla bean ice cream, a touch of cinnamon and sprinkle lightly with powdered sugar. |

Notes: I only make the crusts from scratch for special occasions. You can buy the multi-fruit frozen packs. I never put in rhubarb. Emerald Lake is in Canada. This pie won all kinds of awards.
