˝ cup pine nuts
1 lb. ground turkey
1 tsp cornstarch
7-8 oz. housin sauce
2 ˝ cups cooked rice (mix brown rice half and half with wild rice)
Lettuce leaves

Directions:
Directions:
1. Preheat oven to 400 degrees. On a rimmed cookie sheet, toast the pine nuts for 5-10 minutes or until golden brown. Set aside.
2. In a large skillet, sauté the ground turkey over medium-high heat, stirring until it changes color and is cooked through. Drain well and return to the pan.
3. Stir in the cornstarch and housin sauce. Heat and stir over medium heat until bubbly. Add the pine nuts and the rice and stir until heated through.
4. Spoon mixture onto lettuce leaves.
