Sauce-
4 tbsp. butter
1/2 cup flour
1 cup white onion peeled and chopped
3 cups chicken broth
1 cup fresh green chiles, roasted, peeled and chopped
2 cloves garlic minced
2 tsp. Mexican oregano, crumbled
Salt and pepper to taste

Enchiladas-

8 corn or flour tortillas
1/2 cup sour cream
4 cups chicken, cooked and shredded
3 cups cheddar cheese, grated

Sauce-

Melt butter in saucepan, add flour mix thoroughly and cook over medium heat for 2 minutes. Add onion, cook until soft, about five minutes. Whisk in chicken broth, bring to simmer and stir until smooth, add roasted green chiles, garlic, Mexican oregano, salt and pepper simmer for 20 minutes

Enchiladas-

Preheat oven to 350º, pour 1/2 of the sauce into 9 X 12 baking dish and spread evenly. Assemble by placing 1/2 cup of chicken, 1 tbsp. of sour cream (optional), 1 tsp. sauce, and little grated cheese onto corn tortilla. Roll it up and place it in baking dish, seam side down. Repeat. Top with remaining sauce and grated cheese. Cook 30 minutes at 350º.
