3 eggs
2 cups sugar
5 cups flour
2 teaspoons double acting baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract or 1 tablespoon vanilla sugar
1 3/4 cups buttermilk or sour milk
Topping:
2 cups shredded, dried coconut
1 cup sugar
Glaze:
1/2 cup + 3 tablespoons unsalted butter
1/2 cup heavy cream

Directions:

1. Preheat oven to 350 degrees F.
2. Mix eggs and sugar for several minutes on medium speed, until they are light yellow and fluffy.
3. Sift together the flour with the baking powder and salt. Add one third of the mixture to the eggs and mix well. Pour about one third of the milk and all of the vanilla into the egg, flour mixture and mix well. Repeat twice with remaining flour and buttermilk.
4. Spread the batter into a greased and floured 1/2 sheet cake pan. Mix the coconut and sugar together in a bowl and sprinkle evenly over top (German Streusel Topping can be used in place of the coconut mixture. Don't use the butter milk glaze when using the Streusel.)
5. Bake at 350º F. for about 25 minutes, or until topping is browned and cake begins to pull away from the pan sides. You want the sugar to caramelize a little on the top, if possible.
6. Towards the end of the baking time, place the butter and cream in a small pan and bring to a boil briefly. Pour the mixture evenly over the hot cake after it is removed from the oven. It will soak in about 1/4 inch into the topping of the cake.
7. Serve warm or at room temperature. Refrigerate or freeze left overs.
