1 - 9" unbaked pastry shell
8 slices of baken, diced
8 oz of natural swiss cheese, shredded (2 cups)
1 tbsp all purpose flour
1/2 tsp of salt
dash nutmeg
3 beaten eggs
1 3/4 cups of milk

Directions:
Directions:
Bake pastry shell in a very hot oven (450) only 7 minutes or just till lightly browned. Remove from oven, reduce oven temperature to 325.

Cook bacon till crisp, drain and crumble, reserve 2 tbsp of oil.

Place remainig bacon in the pie shell, add cheese. Combine remaining ingredients, pour over. Trim with reserved bacon and place in oven at 325 for about 40 minutes or till almost set in the center.

Let cool for about 10 - 15 minutes before serving.

This was a very good recipe but reading my mother's notes left something to be desired. It may take a few times before you get this one right. I would also add some sliced mushrooms and green peppers to this recipe.
