This recipe is for "Hungry Carnivours"

4 lbs of Ground Round
1 lb of Ground Pork
1 12 oz can of diced tomatoes and peppers ( spicy)
1 Large Onion( chopped)
1/2 cup of bread crumbs
2 egss wisked before adding
salt and pepper
1 can of tomatoes sauce or crushed tomatoes
5 garlic cloves diced
2 cups of ketchup or so. Enough to cover the top of the loaf

1 hour before placing the meat loaf into the oven for cooking, place the loaf into a refridgerator and let it cool. This will help it into keeping its form

Spray a medium sized roasting pan with PAM.

In a large bowl mix all ingredients except for the ketchup and 1/3 can of the crushed tomatoes. Mix well with "clean" hands and in a large roasting pan ( like you would use for a medium sized turkey ) form the meat into a loaf in the center of the pan. If the loaf seems to be a little soupy, add more bread crumbs.

After forming the loaf cover the top with the remaining crushed tomatoes and ketchup and cover with foil and place it into the fridge. You can even leave it in the fridge overnight.

Pre heat the oven to 350 place the meatloaf on a middle rack in the oven and bake for 40 minutes with the foil on and 20 minutes with the cover off. If it looks like all the ketchup slid off the loaf when you took the foil off re-coat it with more ketchup.

Check for doneness by cutting into the loaf. If too rare bake a little longer.

Great recipe, add a little pepper to it to spice it up a-little. Serve with corn and mashed potatoes. Making me hurgry just thinking about it, Oh yes DO NOT serve this if Mickey is comming over and do not have cream style corn if Glee is comming over, change to green beans.
