1 large boneless beef chuck roast
Pat flour, salt and pepper on both sides, then brown both sides in large pot with oil. Cover roast with hot water. Cover and cook a couple hours, until meat is done. Then add;
6 potatoes, peeled and cut in half
10 - 12 carrots, peeled and cut in half
1 large onion quartered
2 celery stalks, cut up
Salt, pepper, garlic and worcestershire Sauce

Cook until vegetables are done. Remove meat and vegetables and thicken gravy with flour or cornstarch mixed with a little water. (Add slowly so as not to get gravy too thick) Season as desired.

I remember after browning the meat, Mom would cover the meat with hot water, add vegetables & seasoning, then cover and cook slowly while we went to church. It would be ready when we got home. She would remove meat & veg. and thicken the gravy. Many times there would be guests from church for dinner.
