1 1/4 lbs lean stewing beef, cut into 1 1/2 inch cubes
6 small Yukon Gold potatoes, halved or quartered
3 medium size carrots, cut into pieces
1 yellow onion, quartered
2 ribs celery, sliced or chopped coarse
2 spigs thyme
1 tsp. salt (optional)
1/2 tsp ground black pepper
2 tbsp all-purpose flour
2 cups of low-fat beef broth

Directions:
Directions:
In slow cooker, place beef, potatoes, carrots onion, celery and thyme.
Sprinkle with salt,pepper and flour. Pour broth over top. Lightly stir to blend in flour. Cover and cook on medium until meat is very tender,about
10 hrs.(depending on cooker). Discard sprigs of thyme. Adjust seasoning.
