* 7-8 corn tortillas (flour not recommended; wrong flavor/texture)
* 15 oz tomato sauce
*1/2 tsp cumin
*1/4-1/2 tsp garlic powder
*1 tsp cilantro/coriander
* 4 oz mild cheese (Chihuahua or Queso Quesadilla)
* up to a cup cottage cheese curds
*Sour Cream

Directions:
Directions:
Preheat oven to 325 F. Spray 9x7x2 baking dish with cooking spray, then cover
bottom with 3 or 4 tortillas. Layer sliced cheese. Dot and spread cottage
cheese. Pour 1/2 sauce over dish, covering tortilla edges. Repeat. Bake for
20 minutes. Dot top with sour cream and bake an additional 5 minutes. Serve with beans and rice.
