1 T. olive oil
1 c. chopped onion
2 tsp. chopped fresh, or 1/2 tsp. dried thyme
4 garlic cloves, finely chopped
1/4 c. dry white wine
2 T. white-wine vinegar
1 2/3 c. chopped pitted green olives
1/3 c. pitted picholine olives (about 15 olives)
1/4 tsp. freshly ground black pepper

Directions:

In saucepan, heat oil over medium heat.
Add onion.
Cook, stirring frequently, for 8 minutes, or until soft.

Stir in thyme and garlic.
Cook for 2 minutes, stirring frequently.

Stir in wine and vinegar.
Bring to a boil.
Reduce heat.
Cook, stirring occasionally, for 8 minutes, or until most of liquid evaporates.

Place in food processor.
Add olives and black pepper.
Process until smooth, scraping down sides of bowl.
