Horseradish Sauce:
1/2 cup mayonnaise
1/4 sour cream
2 tbsp horseradish
1 tsp Dijon mustard

Rib Roast:
6 lbs bone-in beef rib roast
2 tbsp finely chopped fresh thyme leaves
4 garlic cloves, minced
1 tsp coarsely ground pepper
1 tsp salt

Preheat oven to 450ºF.

Horseradish Sauce:
In a small bowl combine mayonnaise, sour cream, horseradish and mustard. Cover and refrigerate until ready to serve.

Rib Roast:
In a small bowl combine thyme, garlic, pepper and salt; rub and press evenly over surface of roast. Place roast in a large roasting pan, bone-side down. Roast, uncovered, 15 minutes.

Reduce oven temperature to 350ºF. Roast 1 hour to 1 hour, 20 minutes more or until an instant-read thermometer registers 145ºF for medium-rare, or to desired doneness.

Let stand 15-2 minutes before carving. Serve with horseradish sauce.
