"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
2/3 lb sausage
1 3/4 lb beef liver
1/2 cup self-rising flour
3 cups milk

Directions:
Directions:
Brown about 2/3 pounds of sausage in a plastic tube, tearing it apart into small pieces as it browns. Leave in frying pan.

Cut about 1 3/4 pounds of beef liver into small pieces. Brown it on both sides well in the sausage and grease. (I usually push the sausage aside or it can be removed from the grease.)

When liver is brown, add 1/2 cup of self-rising flour and mix well.

Stir in 3 cups of milk. Stir this until the gravy thickens to the consistency you want.

Personal Notes:
Personal Notes:
A lot of people do not like liver, but they do like this gravy.
