1-2 T. olive oil
1-2 large onions thinly sliced
1 tsp. grated fresh ginger
2 large cloves garlic, minced
4 large chicken legs and thighs, skinned and disjointed
(may add 1/2# lamb)
salt/pepper to taste
2 c. canned tomatoes with juice
1/4 tsp. cinnamon
1/2 tsp. cayenne pepper
1/2 tsp. ground cumin
1/2 tsp. tumeric
3 carrots, diced
2 potatoes, diced
1 c. cubed zucchini or summer squash
1 tsp. sugar
2 T. raisins
2 large T. chopped fresh parsley
2 T. chopped cilantro
1-1 1/2 c. cooked chickpeas
1-10 oz. pkg. instant couscous

Directions:
Directions:
Sauté onions, ginger, and garlic in oil, till clear.
Remove onion mixture from skillet - leaving oil in pan.

Place chicken in pan with salt and pepper - brown on all sides.
Return onion mixture to roaster.

Add tomatoes with juice, cinnamon, cayenne pepper, cumin, and tumeric.
Stir in carrots and potatoes - mix well.

Bring to a boil, cover and simmer 1/2 hour.

Stir in zucchini, sugar, raisins, parsley, cilantro, and chickpeas - simmer another 1/2 hour.

Meanwhile, prepare Couscous according to package.
Serve over Couscous.
