Ingredients: 1 3/4 c. all-purpose flour 1 tsp. baking soda 1/4 tsp. salt 8 T. (1 stick) unsalted butter, at room temperature 3/4 c. lightly packed light brown sugar 3/4 c. granulated sugar, divided 1/2 c. peanut butter, smooth or crunchy 1 tsp. vanilla extract 1 large egg, at room temperature 48 chocolate kisses (Hershey's) removed from their wrappers

Directions:Preheat Oven: 375º
Line 2 cookie sheets with parchment paper, or grease them lightly with butter or vegetable oil.
In small bowl, sift together: flour, baking soda, and salt. Set aside.
Using electric mixer at medium speed, cream butter, brown sugar, 1/4 cup granulated sugar, peanut butter and vanilla extract in medium-sized bowl for 2-3 minutes, or until light and fluffy, stopping mixer twice to scrape bowl with rubber spatula. Add egg. Blend at medium speed for 10 seconds, or until egg is almost incorporated. Scrape bowl.
Add dry ingredients at low speed. Blend for 15 seconds, stopping mixer to scrape bowl and paddle. Blend for 5 seconds, or until dough is smooth.
Measure 48 rounded teaspoonfuls of dough. Using hands, roll them into balls. Dip 1 side of each ball in remaining 1/2 cup granulated sugar (optional). Place 2" apart, sugar side up, on prepared cookie sheets.
Bake: 8-10 Minutes, or until light golden.
Remove sheets from oven. Immediately top each cookie with chocolate kiss. |
