1/2 cup maple flavored syrup
2 egg whites
1 cup evaporated milk (well chilled)

Set refrigerator control to fast freezing. Cook syrup to soft ball stage, 238º degree. Beat egg whites until stiff but not dry. Add syrup slowly, beating constantly until all syrup is added and mixture is cool. Whip milk until thick and fold egg whites-and-syrup mixture into it. Pour into refrigerator tray and freeze until firm. Then turn cold control back to normal. 8 servings.
