8 slices of good white or wheat bread, lightly toasted
8 slices of American cheese
2 or 3 fresh garden Heirloom tomatoes, sliced
8 slices of center cut bacon. Cook until it's almost crisp, tender enough to bend without breaking. Drain well on paper towels.

Grated Parmesan Cheese

Preheat the broiler on your oven. Lightly toast the bread and place all the slices on cookie sheet. Put a slice of cheese on each piece of bread. Place a slice of tomato on each slice of cheese. Fold the bacon in half and place 1 piece on top of each piece of tomato.
Sprinkle each sandwich with garlic powder and Parmesan cheese to taste. Broil until the edges of the bread are lightly toasted, the American cheese is melting and the bacon is sizzling. It cooks quickly, so don't take your eyes off of them until they are done.

Mom made these up in Bayshore. We start making these as soon as we get our tomatoes every summer and make them until they are all gone. They are great with homemade potato salad.
