2 1/2 cups flour
2 tsp baking powder
3/4 tsp salt
1 tsp soda
1/2 tsp cinnamon
1/4 tsp ginger
2 beaten eggs
1 1/4 cups sugar
1/2 cup oil
2 cups finely shredded zucchini
1 cup nuts

Directions:
Directions:
Stir together flour, baking powder, soda, salt, cinnamon and ginger; set aside. In another bowl beat together eggs, sugar and oil. Add egg mixture to flour mixture along with zucchini and nuts. Mix well. Put into a greased 9 x 5 x 3 inch loaf pan. Bake at 350 for 50-60 min. For a softer crust, wrap and store loaf overnight before slicing.
