Start your icing FIRST: (Bake cake while icing sets for 1 hour)

ICING
2 cups sugar
2 sticks (1 cup) butter
1 teaspoon vanilla
1/4 teaspoon salt
1 small can evaporated milk

Combine all ingredients and let stand for one hour, stirring occasionally.

Cook to soft boil stage. Cool to almost lukewarm. Beat until spreading consistancy. Spread between layers and on top and sides of cake layers.

White Chocolate Cake Layers:

3/4 pound white chocolate, melted in double boiler and allowed to slightly cool
1 cup butter
2 cups sugar
4 eggs
2 and 1/2 cups cake flour
1/4 teaspoon baking powder
1 cup buttermilk
1 cup chopped pecans
1 cup flaked coconut
1 teaspoon vanilla

Cream butter and sugar together until light and fluffy. Add melted chocolate. Add eggs, one at a time, beating after each addition. Sift flour with salt and baking powder; add alternately with buttermilk, beating well each addition. Fold in vanilla, pecans and coconut.

Pour into two greased and floured 9 inch layer pans and bake at 350º for about 45 minutes, or bake in a 9 or 10 inch tube pan for about 75 minutes.

Cool before frosting.
