6 - 8 boneless chicken cutlets
3 tbsp. butter
1 large jar salsa (mild or medium)
1 pkg. shredded cheddar cheese
1 bunch scallions (sliced)
sour cream

Directions:
Directions:
Lightly salt and pepper cutlets. Fry cutlets until golden brown on both sides. Place cutlets in baking dish. Top cutlets with salsa and cheddar cheese. Bake for 30 minutes at 350 degrees. Top with a few dollops of sour cream and sprinkle scallions.
