2 c very finely chopped cabbage (green, red, or Napa)
2 med seeded and finely chopped tomatoes
1 c chopped cucumber (or zucchini)
1 shredded carrot
10 minced mint leaves
1/4 c yellow chana dal (dried split desi chickpeas) *

Salad Dressing:
1 Tbsp olive oil
1 Tbsp vinegar
1 Tbsp lemon juice
1 Tbsp ginger juice (or grated fresh ginger)
1 tsp salt
1 tsp sugar
1/2 tsp ground black pepper

Variations
*substitute split yellow moong dal or moong dal sprouts for the chana dal
*substitute boiled corn and finely chopped bell pepper for the chana dal
*substitute canned chickpeas for the chana dal

Directions:
Directions:
Soak the chana dal at least 2 hours in lukewarm water. When ready, the dal should be soft all around. Drain the water. Mix the chana dal with the chopped vegetables. Mix the salad dressing ingredients, and mix into the salad. Let sit half an hour for flavors to mingle.
