1 box instant potatoes (I prefer Potato Buds)
8 oz. cream cheese
1/2 to 3/4 c. cheddar cheese, grated
1/2 to 3/4 c. Parmesan cheese
1 green pepper, chopped
1 bunch green onion, including greens
1 stick of butter

Directions:
Follow recipe on box for 12 servings of potatoes, but add one entire stick of butter. Mix together all remaining ingredients and add to potatoes. Bake in casserole dish at 325º or until slightly brown on top.
