8 pieces breast of chicken
1 pkg. mozzarella cheese
1 pkg. fresh mushrooms, sliced
Grey Poupon mustard
1 small onion
2 c. rice

Directions:
Directions:
Pound chicken flat between sheets of wax paper. Spread on mustard, salt, pepper, and one piece of cheese. Roll up chicken and pin with toothpicks. Continue until all are done. Meanwhile, simmer tomatoes, mushrooms, and onion. Place chicken roll-ups in sauce, cover and simmer until done. Serve over bed of rice.
