GUMBO CAN BE MADE WITH A HAM HOCK, CHUNK OF CHICKEN, AND/OR SHRIMP.
Full bunch of celery chopped
2 medium onions chopped
1 can of tomatoes(diced or stewed)
1 can of tomato sauce
1 bag frozen cut okra
water to cover the vegetable or 1/2 water and 1/2 chicken broth
salt and pepper to taste

Use a large pan, fill with onion, celery, okra, stewed or diced tomatoes, tomato sauce, chicken, ham, or shrimp.
Cover with water.
Prepare about 1- 1 1/2 hour. Do not cook too long, celery gets mushy
Liquid will lessen.(do not over cook) flavor will increase.
Simmer for 1 1/2 hour or less.

Cook rice, 1 cup rice to 2 cups water, 1 tablespoon butter.
Serve Gumbo over rice.
Good with some Italian Bread and butter
