1 1/2 c. flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. ground cloves
pinch of salt
1 1/4 c. pumpkin puree
1/4 c. heavy cream
1 Tbsp. lemon juice
4 oz. unsalted butter
1 c. light brown sugar, packed
3 eggs, lightly beaten
1/2 c. crystallized ginger, chopped

Butter inside of steamed pudding mold (1 1/2 to 2 quart capacity). Prepare large pot of boiling water (enough to cover 2/3 the way up the sides of the mold when placed in pot). Place a metal trivet in bottom of pot to keep mold off of bottom.

Sift flour, baking soda, cinnamon, cloves and salt. Set aside. In bowl, mix pumpkin puree, cream, and lemon juice. Set aside.

In bowl, combine butter and brown sugar. Beat for 3 minutes until light and fluffy. Add beaten eggs, a little at a time. Continue beating for 2-3 minutes. Fold in flour mixture in 3 parts, alternating with pumpkin puree mixture. Mix in ginger.

Spoon batter into mold (avoid air pockets), cover and place in pot with boiling water. Cover pot and simmer for 1 1/2 hours. Remove and let rest for a few minutes.
