2 sticks of butter1 cup of packed brown sugar(light)
1 cup white sugar
2 eggs beaten
1 1/2 cups of flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoon vanilla
1 1/2 teaspoon freshly grated nutmeg
1 teaspoon cinnamon
3 1/2 cups of rolled oats

Directions:
Directions:
Cream butter, add white and brown sugar.
Add eggs, then flour, baking soda, nutmeg, cinnamon, salt, and vanilla.
Slowly add the oatmeal to the mixture.
Spoon out dough onto a cookie sheet, and cook for about 6-8 minutes,(every oven is different, so it is necessary to watch and see if you need to cook longer)
Take the cookies out just before the are done and allow them to sit on the tray for a few minutes.
I usually cook them at 375-3855 degrees.
For freshness put in a tin can or a zip lock bag.

Freshly grated nutmeg gives the cookie a richer taste. If you cook it a little less they will be chewy, allow to cook longer and they will be crispy.
