18 1/4 ounce package yellow cake mix, prepared according to package direction
20 once can crushed pineapple, slightly drained
1 cup sugar
3.4 ounce package vanilla instant pudding mix
2 cups milk
1 teaspoon vanilla extract
3 large bananas, peeled and sliced
2 packages (16 ounces each) sweetened frozen strawberries, thawed and drained
1 cup flaked coconut.
12 ounce container frozen non-dairy whipped topping, thawed
1 cup pecan pieces, optional

1. Prepare cake in a 9 by 13 inch pan. About 5 minutes
before it is done, combine pineapple and sugar in a small
saucepan and boil 5 minutes. Remove cake from oven and
make holes in the top with a toothpick or fork. Pour
cooked pineapple over hot cake. Set aside on wire rack to cool.
2. When cake is cool, make pudding according to package
directions with the 2 cups milk. Stir vanilla into the
pudding and spread over cake. Evenly place bananas and
strawberries over the pudding, then sprinkle with
coconut. Spread whipped topping over coconut. Sprinkle
with nuts, if desired. Store in refrigerator.
