1# mild Italian sausage
½# ground beef
1 medium onion, chopped fine
2-3 cloves garlic, minced
2 large carrots, diced
2 large stalks of celery, diced
1-2 zucchini, diced
2 cups coarse cut baby fresh spinach
1 14.5 oz. chopped tomatoes (drained and chopped finer, add back liquid)
2 cans white beans, drained and rinsed (mash ½-1 cup)
8 cups chicken stock
Sprig of fresh rosemary
2 tsp. basil
1 tsp. thyme
2 Tbsp. olive oil
2 cups cooked salad macaroni or ditilini
1 cup cooked orzo pasta
Fresh, grated parmesan cheese

Directions:
Directions:
In a heavy large soup pot (Dutch oven), heat 2 Tbsps. olive oil over medium heat. Add onion and garlic, cook until softened (about 2 minutes). Add sausage and ground beef, break up and cook until starting to brown (about 6-8 minutes). Drain off fat. Add carrots and celery, cook about 5 minutes. Add tomatoes and juice, chicken stock, beans and spices. Bring to a boil, turn down and simmer 20-30 minutes. Add zucchini, spinach and mashed beans, cook 5 minutes longer. Meanwhile cook pasta according to package directions, drain and set aside.
When ready to serve, add pasta, heat through and serve. Garnish with fresh parmesan cheese.

Makes 8-10 hearty servings.
