1/2 C cornstarch
1/2 C flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp sugar
1 egg
about 2/3 C water

Directions:
Directions:
Measure and combine dry ingredients into bowl; mix with wire whip.Although the original recipe did not use it, Mom always added about 1 tsp of paprika as well. Add egg and water (add water to get desired consistency). Beat til smooth.

When using with clams, first salt and pepper clams; then roll clams in flour; dip floured clams in batter and then fry in oil.

This was an important part of fried clams!! We also used this batter for frying sturgeon. In later years, these were the only two foods we ever fried. They were such a treat and always looked forward to. Mom would ususally add 1 tsp. paprika as well. We always thinned the batter. Recently, I tried a new batter (which was ok) and learned that a thicker batter makes a crispier fried clam. I'm going to try not thinning this batter (the above is NOT thinned, but we always thinned it down to reduce the amount of batter on each clam) and see if that holds true.
