Christmas Rice Recipe

1 box Uncle Ben's wild rice--not instant
1 can (20oz) diced tomatoes
1 small green pepper, chopped
mushrooms, sliced
1 small can chopped black olives
1 cup chopped onion
1/3 c. margarine cut up
1 tsp salt
pinch sugar
1/2 tsp. pepper
1/2 tsp. oregano
1 1/2 c. boiling water
1 cup velveeta cut in cubes

Grease casserole. Put in rice, tomatoes with juice. Layer all ingredients except oregano and cheese. Sprinkle with oregano. Pour water over casserole. Cover and bake at 325 for 1 hour. Stir. Top with cheese. Cover and bake 1 more hour.
