1 package of lemon cake mix
1/2 cup of lime juice (If you have key lime juice, great!, if not regular lime juice is fine)
1/2 cup of water
Zest (shavings from the lime peel) of 1/2 of one lime (Optional)
1/2 cup of canola oil
4 large eggs
1 (3 oz) package of lime gelatin

Cream Cheese Frosting:

1 stick butter
1 8 - oz. pkg. cream cheese
2 cups powdered sugar
1 tsp. vanilla

Preheat the oven to approximately 325 degrees. Mix the cake mix, lime juice, water, lime zest, jello, eggs, and vegetable oil together. Stir well. Pour the mixture into a 9 x 13 lightly greased cake pan. Bake for about 25 to 35 minutes or until a toothpick inserted in center comes out clean. Allow cake to cool then frost. I prefer to use cream cheese frosting.

Directions for Cream Cheese Frosting:

Soften butter and cream cheese. Beat in powdered sugar, add vanilla.

If I don't have fresh key lime juice, I prefer to use Joe and Nellies Lime Juice which can be purchased at most grocery stores.
