"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Preheat the oven to approximately 325 degrees. Mix the cake mix, lime juice, water, lime zest, jello, eggs, and vegetable oil together. Stir well. Pour the mixture into a cake pan. (Be sure to spray with pan if necessary.) Bake for about 35 minutes. Set the cake aside and wait for it to cool completely. Use the fridge if necessary. Crumble the cake mixture and transfer into a mixing bowl. Add the jar of cream cheese frosting. Stir well.

Place the mixture into the refrigerator for about 10 minutes or so. Remove from fridge, and shape into small balls. Place the balls onto a plate/ dish covered with wax paper. Freeze balls for at least 2 hours. Melt the white dipping chocolate. Dip the cake balls into the white chocolate and set them aside. Add cake sprinkles over the chocolate if desired. Store in air tight container. Does not have to be stored in the refrigerator.
