CARROT BARS
By Grandma Ruth
3 eggs
1 ½ cups sugar
1 1/3 cups oil
3 jars babyfood carrots (4 oz. jars)
2 ½ cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
Dash salt

Mix all ingredients well; pour into jelly roll pan.
Bake 325 degrees, 30 minutes


FROSTING

1 stick oleo, softened
1 pkg cream cheese (brick, 6-8 oz), softened
3 cups powdered sugar; may need more
½ tsp vanilla

Beat until smooth and fluffy.

It was very hard to get this recipe from Grandma Ruth! She did not use a recipe and it was hard to figure it all out. After she gave me this recipe and I had made it a couple of times….I said she had purposely left out something because mine never seemed to taste as good as hers! Everybody in and out of the family loved this bar.
