1 c. (2 sticks) unsalted butter, softened
3/4 c. granulated sugar
1 c. brown sugar, packed
2 large eggs
1 1/2 tsp. vanilla extract
3 c. cake flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. fine sea salt
12 oz. semi-sweet mini chocolate chips
1 c. coarsely chopped Heath candy bars
Fleur de sel (or fine sea salt)

Preheat oven to 350º F.

In a large bowl, sift together cake flour, baking soda, baking powder and sea salt and set aside. In the bowl of an electric mixer, cream the butter and sugars together until fluffy. Beat in the eggs and vanilla and mix until combined. Slowly add flour mixture and blend until completely incorporated. Stir in chocolate chips and toffee bits.

Drop 2 ounces of cookie dough onto a baking sheet lined with parchment paper. Sprinkle each cookie with a generous pinch of fleur de sel. Bake until cookies are puffed and just started to brown, 13-15 minutes. Transfer cookies to a rack to cool completely.
