2 lbs. lean ground beef
1 medium onion, chopped
1 qt. frozen or 2 (14 oz.) cans peas, beans, corn or mixed vegetables
2 (10 oz.) cans cream of mushroom or celery soup
1-1/3 package Tater Gems
1-1/2 cups shredded cheddar or mozzarella cheese
Salt and Pepper to taste

Brown ground beef in pan and remove grease. Press cooked meat into the bottom of a 9x12" pan. Spread onion and frozen or drained vegetables over meat. Salt and pepper to taste. Spread soup over vegetables. Arrange Tater Gems in rows on top. Bake covered 45 minutes at 350ºF. Add shredded cheese and bake 15 more minutes uncovered.
