2-1/2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. instant coffee granules
1 tbsp. hot water
3 medium mashed ripe bananas
1 cup soft margarine
1-1/4 cups sugar
1 egg
1 cup chocolate chips
Directions:
Directions:
Preheat oven to 400ºF. Mix dry ingredients. Dissolve instant coffee in hot water; add this to the mashed bananas. Beat together margarine and sugar. Add egg and mix well. Add dry ingredients and banana mixture to this; mix well. Stir in chocolate chips. Pour in greased muffin tins and bake for about 25 minutes. Makes 2 dozen.
